The area of production of this precious spice is limited exclusively to the Municipality of San Gimignano.
Since the 13th century San Gimignano is famous for cultivation of “crocus sativus”, and thanks to the saffron trade many local families made a fortune and they built the famous towers still today a symbol of the town.
Saffron is still produced and processed as they did in the Middle Ages; the selection of the bulbs and the picking of the flowers is done early in the morning and by hand, such as the husking of the flowers and than the stamens are dried by the fire.
In the past saffron was used not only for culinary purposes but also in medicines and paints; nowadays there is a decline in use of saffron compare to the past but is still a fundamental ingredient in many traditional recipes.
